Vanilla Chai Spiced Granola

A crunchy granola flavored with warm and cozy chai spices. Great for tossing onto your morning yogurt or snacking by the handful. Goes together quickly and bakes overnight. Awaken to the delicious aroma of granola!

Ingredients

  • Dry Ingredients:
  • 3 cups old-fashioned rolled oats (Can sub quick oats, but it will bake much faster)
  • ½ cup raw wheat germ (Can sub almond meal for gluten-free option)
  • ½ cup shredded coconut (Can be sweetened or unsweetened)
  • ½ cup pecans (Can sub another nut of choice)
  • ¼ cup all-purpose flour (Can sub gluten-free flour of choice. The flour just helps to create bigger granola clusters.)
  • Wet ingredients:
  • 1 ½ tsp Adagio Rooibos Vanilla Chai tea, steeped in ¼ cup water
  • ¼ cup coconut sugar (Can sub brown sugar)
  • ¼ cup maple syrup (Can sub honey)
  • 2 Tbsp canola oil (Can substitute coconut oil for stronger coconut flavor)
  • 1 tsp vanilla
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • Notice all the substitutions? Granola is very forgiving!

Directions

1. Steep tea in a measuring cup and set aside.

2. Preheat oven to 170°F (or lowest setting). Line a baking sheet with parchment paper or silicone baking mat and set aside.

3. Combine dry ingredients in large mixing bowl. Set aside.

4. Add sugar, syrup, oil, vanilla, and salt to tea. Stir well. Pour over oat mixture and toss until evenly coated.

5. Pour mixture onto prepared baking sheet and spread into an even layer, pressing slightly.

6. Bake overnight. Don't stir--you'll break up the clusters.

7. Remove from oven and allow to cool completely on baking sheet. Granola will harden more as it cools. Store in an airtight container at room temperature.
