Smokey Deviled EggsSubmitted by: Margaret OrtigoDeviled eggs with a suble smokey flavor. Prep Time: Prep time: 36 hours. Cook time: 5 minutes Serving Size: 4 to 5
Peel boiled eggs. Pour strong tea over eggs until covered. Place in refrigerator and marinate for 24 - 36 hours. To increase the amount of flavor absorbed into the eggs, you may want to prick eggs with a fork or toothpick, but not into the yolk. Egg whites will take on a brown color and subtle smokey flavor. Remove eggs from tea. Cut in half and remove yolk. Mix thoroughly with mayo, relish, and seasonings. Carefully place about 1 heaping teaspoon of yolk mixture into each egg half. For garnish you could sprinkle with a little red pepper. |
