Citrus-Tea Salmon

Lemon, orange, Irish Breakfast tea, and brown sugar encrust this salmon to give it a truly flavorful zing.

Prep Time: 15 minutes Prep time/ 20 minutes cook time.
Serving Size: 4
Ingredients
  • (2) 1 pound King Salmon fillets
  • 1 Tbs. + 1 tsp Adagio Irish Breakfast Tea
  • 2 Tbs. dark brown sugar
  • 1 tsp dried orange peel
  • 1/4 tsp ginger powder
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 tsp lemon juice
  • 1 egg, beaten
Directions
Preheat oven to 350 degrees F.

1. In a mortar and pestal, coarsly crush the irish breakfast tea.
2. In a small bowl mix together the curshed tea, orange peel, ginger, sugar, salt and pepper.
3. In a separate medium bowl, mix egg and lemon juice together.
4. Drench each salmon fillet in the egg mixture and and place on baking pan.
5. Sprinkle the Citrus-Tea rub on each and spread evenly to coat each fillet.
6. Cook in oven for 20 minutes.
