Pi Lo Chun Pasta Salad

A favorite for picnics and summer get-togethers!

Ingredients
  • 1/2 lb pasta, cooked
  • 1/4 cup vinegar
  • 1/2 cup strongly brewed Pi Lo Chun tea
  • 1/2 cup olive or vegetable oil
  • 2 tsp salt
  • 1 tsp sugar
  • 1 tsp garlic powder
  • 2 tsp Italian Seasoning*
  • 1/2 to 1 tsp minced onion
  • 1/2 carrot, grated
  • dash of ground black pepper
Directions
Start the tea and get it nice and strong. While it's soaking, get the noodles cooking as the package says to do so. Most noodles take about 9 minutes to cook, but some are much faster, so read the package. (You can add some tea to the water if you want extra Pi Lo Chun flavor in your noodles!) Grate your carrot while the tea is soaking and the noodles are cooking. When the noodles are ready, remove them from the heat and drain the water. In a small bowl mix all of the spices and salt and sugar with the carrot and onion. Add the oil and vinegar. If you think your tea is strong enough, add this to the bowl and stir well! Pour the mixture over the noodles and mix until the noodles are covered. Chill the pasta salad for better flavor, but don't wait too long. After about a day, the pasta salad is still good to eat but the tea flavor starts to leave.

* Note - If your Italian Seasoning has too many big pieces that look like stems, you may want to try grinding the spice down until it's more powdery.
