Genmai Cha Salmon

A healthy dish with a twist.

Prep Time: 20 - 30 minutes of prep, dicing and slicing.
14 minutes to bake.
Serving Size: 4
Ingredients
  • 16 oz Salmon
  • 1/4 C. Red wine
  • Tin foil
  • 8 mushrooms - sliced thin
  • 12 asparagus tops
  • 1 carrot - julienned
  • Handful cauliflower - chopped into small pieces
  • Handful green beans
  • 24 Cherry tomatoes
  • Butter/Olive oil
  • Salt/Pepper
  • 1 TB. Chervil
  • 1.5 - 2 TB. Genmai Cha
Directions
Place butter/olive oil in a pan, add veggies (except tomatoes) and wine. Salt and pepper to taste. Gently cook until the veggies release juices. Add the genmai cha, gently cook two to three more minutes.

Line a large pan with the tin foil, spray with olive oil, place veggies in the bottom. Add the cherry tomatoes at this point. Place the Salmon on top of veggies. Sprinkle Salmon with salt, pepper and chervil. Make a foil wrap around everything, sealing all around.

Bake at 400* for 14 minutes or until Salmon is cooked through.

Serve with wild rice.
