Oolong Pork Roast

A moist & delicious pork loin

Prep Time: 1 - 1 1/2 hours
Serving Size: 6-8
Ingredients
  • 3-5 Lb Pork Roast Tenderloin
  • 1 can Pineapple slices including the juice
  • 1 tbl fresh peppercorn
  • 2 cups strongly brewed Adagio Oolong #8 tea
  • 1 tsp fine Sea Salt
  • 1/4 tsp crushed Thyme
  • 1/4 tsp Cracked/Ground sage
  • 1 tsp Sweet Basil
  • 1 tsp Brown Sugar
Directions
Place roast in shallow baking dish splash a tad of white vinegar &
sprinkle with sea salt and let set for 20 minutes (preferable overnight but who has the time 20-30 minutes will suffice)

while waiting in small sauce pan stir well, heat slowly
pineapple juice, brown sugar, tea, sage & basil.
Bring to small boil not complete boil on low heat

pour over roast and sprinkle some crushed paper over meat .

Bake 300 degrees for approx 30 minutes then place the pineapple rings on top and continue baking approx 20 per pound
Remove and bast with some of the juices let sit on platter for about 5 minutes than
slice with electric knife and drizzle
serve with fresh vegetable, rice or potatoes and of course don't forget some homemade applesauce and bread/rolls
