Cheesy Pu-erh Dinner Rolls

These cheesy dinner rolls which are elevated by the subtle flavor of pu-erh. The pungent nature of the pu-erh complements the flavor cheese very nicely. These are great to eat with dinner or just as a stand-alone snack.

Prep Time: Prep time 2 hours/cook time 35-45 minutes
Serving Size: 15-20
Ingredients
  • A non stick baking sheet
  • A stand mixer (a powerful hand mixer should work)
  • 3 cups flour
  • 1/8 teaspoon active dry yeast
  • 1 1/2 teaspoons granulated sugar
  • 2 teaspoons salt
  • 3/4 cup Swiss Cheese, grated
  • 1/2 cup milk, warm
  • 1/2 cup pu-erh dante, warm (brewed, double strength)
  • 4 1/2 teaspoons olive oil
  • 8 teaspoons butter, melted
  • 1/2 cup Romano cheese, grated
Directions
1. PREHEAT oven to 375ºF (190ºC).

2. Combine 3 cups flour, yeast, sugar and salt in large mixer bowl.

3. Mix well; toss in Swiss cheese.

4. Add warm milk, pu-erh, and oil.

5. Beat on medium speed 3 minutes.

6. Gradually stir in remaining flour using enough flour to make a soft dough.

7. Turn out onto lightly floured board.

8. Knead dough adding more flour as necessary, until dough is smooth, elastic and no longer sticky (about 5 minutes).

9. Place in greased bowl; turn dough over to grease top.

10. Cover with plastic wrap, and let rise in warm place for 30 minutes.

11. Punch down, cover and let rest 10 minutes.

12.Cut dough into 40 pieces, and shape each into a ball.

13.Dip balls in melted butter then roll in Romano cheese to coat.

14. Arrange balls in close proximity to one another on a non-stick baking sheet.

15. Cover with moist paper towels. Let rise in warm place 1-1¼ hours.

16. Bake on lower rack of preheated 375°F oven for 35-45 minutes or until firm and golden.

17. Cool 5 minutes then remove from pan.
