Diabetic Chocolate Spearmint Muffins

These muffins make an excellent addition to Christmas Brunch or as a sweet holiday treat.

Prep Time: Prep Time is nominal.
Cook Time: 15-20 minutes.
Serving Size: 12
Ingredients
  • 2 cups baking/biscuit mix
  • 3 tbsp. sucralose (such as Splenda)
  • 3/4 cup of milk (preferably fat-free)
  • 1 egg
  • 2 tbsp. vegetable oil (I used canola oil.)
  • 3/4 cup sugar free chocolate chunks
  • 5 tsp. spearmint tea leaves
Directions
1. Preheat oven to 400 degrees Farenheit.
2. Grease muffin pan.
3. Combine first five ingredients and stir well. Mixture should be slightly lumpy.
4. Stir in chocolate chunks.
5. Stir in spearmint tea.
6. Fill muffin pans to 2/3 full.
7. Cook until muffins are lightly browned.
