Spearmint Lemoncillo Granita

This is a light refreshing finish to a heavy holiday meal or a nice summer dessert.

Prep Time: Prep time is very short--about 6 minutes (To boil water and brew tea). 'Freeze' time is about 4 hours.

Ingredients
  • Spearmint Tea (2 cups brewed with 4 tsp tea)
  • Sugar (1/2 cup)
  • Lemoncillo (1 tblsp)
Directions
Boil 2 cups of water and add 1/2 cup of sugar. Stir until sugar dissolves. Add 4 teaspoons of Spearmint Tea and remove from heat. Brew for 5 minutes. Strain tea into a 9' metal cake pan. Stir in 1 tablespoon Lemoncillo. Place pan in freezer.

When mixture begins to freeze, rake fork over mixture to start forming ice crystals. Repeat this process about every 30 minutes until the ice is the consistency of a snowcone. Scoop onto a plate or bowl and serve.
