Slow Cooker Smoked Shredded Wild Goose Breast

Use slow cooker to tenderize the wild goose.

Prep Time: 10 minutes/6 hours

Ingredients
  • 2 T butter
  • 2 cloves garlic (or more, to taste), crushed
  • 1 C chopped yellow onion
  • 2 wild goose breasts
  • 3 T worcestershire sauce
  • 2+ cups boiling chicken broth
  • 1/2 C ground lapsang souchong tea
  • 1 C boiling water

Saute garlic and onion until translucent in butter. Add goose breasts and brown on both sides.

Line slow cooker with heavy duty aluminum foil and place tea and boiling water inside.

On top of the tea, create a second 'bowl' of heavy duty aluminum foil. Place remaining ingredients in this, using just enough chicken broth to cover the meat.

Cook on high for 30-60 minutes until the broth begins to boil, then reduce to low and cook an additional 5 hours or so.

Strain out meat/onion from liquid and shred with a fork.
