Chamomile Vinaigrette

A light dressing that would be great with mixed salad greens.

Prep Time: Prep time: 10 min. Chill time: at least 1 hour
Serving Size: makes about 1 cup
  • 1 rounded tbsp. chamomile tea
  • 6 oz. boiling water
  • 2 tbsp. granulated sugar
  • 6 tbsp. canola or other mild oil
  • 1 drop yellow mustard
  • 1/4 tsp. dried tarragon
  • pinch salt
Steep the tea in the boiling water for 5 min. Strain the tea into a bowl and discard leaves. Add the tarragon, mustard, and sugar; whisk until sugar is dissolved. Then slowly whisk in the oil until the emulsion is formed. Season with salt to taste and place into a airtight container to prevent odor transference. Chill at least 1 hour.
