Spicy Cranberry Citrus Chicken Marinade

This marinade combines the essence of citrus and a hint of spice with a traditional cranberry flavor to create a delicious new taste experience. It's great for use in baking, broiling, or grilling!

Prep Time: 10 min.
Serving Size: makes enough for 4 servings of chicken
Ingredients
  • 2 cloves garlic, chopped or pressed
  • 1 tbsp. Tabasco Sauce
  • 1 pinch paprika
  • 1/2 tsp. chili powder
  • 1 tbsp. honey
  • 1 tsp. orange or lemon zest
  • 1 tbsp. lemon juice
  • 1/4 c. vegetable oil
  • 1/4 c. orange juice
  • 2 tbsp. chopped dried cranberries
  • 2 tsp. cranberry tea leaves
  • 1 c. hot water
  • salt and pepper to taste
Directions
Whisk together all ingredients in a bowl or marinade pan. If you are planning on grilling chicken, set aside a small amount of the marinade mixture for later use. Place chicken in the mixture, refrigerate, and let marinate overnight, or for at least several hours.
If you are baking or broiling your chicken, place the chicken in an oven safe dish, then pour some of the marinade over it. This will keep it very moist and tender through the cooking process.
If you are grilling your chicken, brush the extra marinade on during the cooking process. This will add a hint of extra flavor, and keep the chicken tender.
