Jasmine-infused microwaved souffles

Prep Time: 10-15 min.
Serving Size: serves 2
  • 2/3 c. Splenda or granulated sugar
  • 3 tbsp. cornstarch
  • 1/4 tsp. salt
  • 1 cold egg, separated
  • 2 tsp. jasmine tea leaves
  • 2 c. boiling water
  • 1 1/2 tsp. vanilla
  • Optional: 4 round peppermint candies, crushed coarsely
Brew the tea in the boiling water.
Remove the tea leaves and set aside tea.
In microwaveable bowl, mix Splenda (or sugar), cornstarch, and salt.
Add the egg yolk and whisk until blended. Set aside.
In small bowl place egg white and beat until stiff. Fold into the above mixture.
Slowly blend the brewed tea into the mixture until smooth.
Cook uncovered in microwave on "roast" or moderate setting for 4-6 min. or until the consistency of pudding. Check and stir regularly.
Wait 5 min. and pour into 2 parfait glasses.
Top with the crushed candies; serve warm or chilled.
