Scrumptious Carrot Apple Oolong Muffins

These are yummy for a quick treat. Be it a grab and go breakfast or an accompaniment to a steaming cup of tea, these hit the spot.

Prep Time: Prep time: 20 min. Cook time: 20-22 min.
Serving Size: makes 20 muffins
Ingredients
  • 3 eggs
  • 1 c. canola oil
  • 2 tsp. vanilla
  • 1/4 c. hot water
  • 1/2 tsp. oolong tea leaves
  • 2 c. finely grated carrots
  • 1 c. chopped, peeled apple
  • 1/2 c. raisins
  • 1 1/4 c. sugar
  • 1 1/4 c. whole wheat flour
  • 1 c. all-purpose flour
  • 2 1/2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
Directions
Brew tea in hot water and let steep 5 min. Strain. Allow to cool to room temp.
Spray 2 muffin pans with nonstick cooking spray.
In a bowl, combine eggs, oil, vanilla, and brewed tea. Add carrots, apple, and raisins to egg mixture and set aside.
In a separate bowl, combine sugar, flours, baking powder, cinnamon, and salt. Use a fork to evenly distribute ingredients. Next, fold in wet ingredients and mix until just blended. Spoon mixture into muffin cups and bake at 400°F for 20-22 min. until done.
