Secret Chicken Salad

I love having a different flavor to my tea sandwiches as many of them tend to be rather bland. This can also be used for a luncheon salad, served on a bed of lettuce. This recipe always has favorable reviews and has them guessing!

Prep Time: 20 minutes plus soak time
Serving Size: 6
Ingredients
  • 4 chicken breasts, cooked and chopped (or 1 large can of chicken)
  • 2/3 cup chopped celery
  • 1 small shallot, finely chopped
  • 1/2 cup dried cranberries
  • 1 cup strong brewed Pu Erh tea
  • 1/2 cup copped toasted pecans
  • 1/2 cup sour cream
  • salt and pepper to taste
Directions
Soak the dried cranberries in the brewed Pu Erh tea overnight. Drain the cranberries and combine with the chicken and rest of the ingredients. Add the salt and pepper. Chill for 1 to 2 hours or overnight. Can be used for Chicken salad on a bed of lettuce or for tea sandwiches. If making sandwiches, butter bread, then place chicken mixture on half the bread, top with remaining slices. Trim the crusts and cut into desired shape. Your guests will be wondering what is the “secret” ingredient. Makes 6 servings.
