Secret Chicken Salad

A fun salad to use for luncheons on a bed of lettuce, or a tasty filling for tea sandwiches.

Prep Time: Prep time: 20 min. Soak time: overnight
Serving Size: serves 6
Ingredients
  • 4 chicken breasts, cooked and diced, or 2 large cans of chicken
  • 2/3 c. chopped celery
  • 1 small shallot, finely chopped
  • 1/2 c. dried cranberries
  • 1 c. boiling water
  • 2 tsp. pu'erh tea leaves
  • 1/2 c. chopped toasted pecans
  • 1/2 c. sour cream
  • salt and pepper to taste
Directions
Brew tea in water and steep 5 min. Strain.
Soak the dried cranberries in brewed tea overnight. Drain the cranberries and combine with the chopped cooked chicken and rest of the ingredients. Add salt and pepper to taste. Chill for 1-2 hours. Serve on a bed of lettuce, or make tea sandwiches.
