Tealicious Smoky Eggplant SpreadSubmitted by: susan landonAn exotic,unique flavor of a smoky, sweet & salty eggplant spread. Prep Time: Prep time, 15 minutes Cook Time, 20 minutes Serving Size: 1 cup
Peel eggplant and dice 1'cubes Drizzle olive oil on top,sprikle kosher salt, toss and spread on cookie sheet. Bake 400 degrees,20 minutes or until eggplant releases back the oil and is tender but not overcooked. In a coffee or spice grinder,ground tea spices 5 seconds or so for a fine powder. Small Bowl Add to the tea powder, 2 teaspoons olive oil or just enough oil to make a thin paste. Medium Bowl Mash lightly cooled eggplant. Add tea paste to eggplant and blend in. Add fig jam or fig spread to eggplant and blend in. Spread on Bagel chips or Pita toast. * There should be 3 distinct flavors that linger on your tongue of Smoky,Sweet& Salty Adjust to your palette.
