Salmon Ochazuke

This traditional Japanese dish is easy to prepare and is perfect as a light lunch or a snack.

Prep Time: 15 minutes when preparing with leftovers
Serving Size: 4
Ingredients
  • - 4C White or brown rice
  • - Leftover cooked salmon or 1/2 can salmon
  • - 1 sheet nori (dried seaweed), cut into thin ribbons
  • - Lightly salted Japanese-style rice crackers, 4
  • - Seasalt, to taste
  • - Ground black peppers, to taste
  • - A pinch of toasted sesame seeds
  • - Green/genmai tea, prepared in a teapot
Directions
- Prepare rice in a rice-cooker or boil as instructed on package.

- Fry canned salmon in olive oil, season with salt and pepper.

- Crush rice crackers in a ziploc bag, add nori.

- Sprinkle the rice crackers and nori over the rice, add salmon and sesame seeds.

- Pour green tea over the whole thing. Don't over-do it; make sure you pour enough so that the rice is porridge-like but not runny.

- Add some salt to taste.

- Enjoy!
