Li Zi Nutcracker Rum Muffins

These muffins are a delightful treat for autumn and winter. The subtle tea flavor complements the walnuts and rum wonderfully. These muffins will make a great breakfast, or a great side to go along with a hearty soup or stew.



  • 3/4 c. whole wheat flour
  • 1/2 c. white flour
  • 1 tsp. baking powder
  • 1/2 tsp. Li Zi Nutcracker tea leaves
  • 1/4 c. milk
  • 1/3 c. strong brewed Li Zi Nutcracker tea
  • 1/4 tsp. vanilla extract
  • 1 tbsp. dark rum
  • 1/4 c. chopped walnuts


Combine flours, sugar, baking powder, and tea leaves in a mixing bowl. Combine the remaining ingredients add to the dry ingredients, stirring until just moistened. Spoon the mixture into greased muffin tins. Fill each tin about half full. Bake at 400°F for 20 min. or until the muffins are just browned around the edges. Serve warm.
