Spicy Cranberry Bread
A festive spiced cranberry nut bread1 m 2
- 4 eggs
- 1 can jellied or whole cranberry sauce
- 1 2/3 c. hot water
- 1 tbsp. cranberry tea leaves
- 1 c. vegetable oil
- 1 3/4 c. flour
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. clove
- 3 c. sugar
- 1 c. finely chopped pecans or walnuts, optional
Brew tea in water and let steep 5 min. Strain.
In a large bowl, beat eggs well. Add cranberry sauce, brewed tea, and oil and beat again.
Sift all the dry ingredients together, then add to wet ingredients.
Pour batter into 2 greased and floured loaf pans. Bake at 350°F for about 1 hour
