- 2 1-lb. king salmon fillets
- 1 tbps. + 1 tsp. Irish breakfast tea
- 2 tbsp. dark brown sugar
- 1 tsp. dried orange peel
- 1/4 tsp. ground ginger
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 1 tsp. lemon juice
- 1 egg, beaten
Preheat oven to 350°F.
With a mortar and pestle, coarsely crush the Irish breakfast tea.
In a small bowl mix together the crushed tea, orange peel, ginger, sugar, salt and pepper.
In a separate bowl, mix egg and lemon juice together.
Dip each salmon fillet in the egg mixture and place on baking pan.
Sprinkle the citrus-tea rub on each and spread evenly to coat.
Cook in oven for 20 min. until fish flakes easily with a fork.
