Strawberry Red Velvet Cookies

The classic red velvet flavor with and added strawberry twist! These light and airy cookies are extremely easy to make- especially if you start with a box of cake mix.

Ingredients

  • 1 tbsp wild strawberry tea
  • 1/8 cup hot water
  • 1 box red velvet cake mix
  • 3 eggs
  • 1/3 cup oil
  • 1/4 cup flour
  • 1 tsp coco powder

Directions

1. Brew tea using 1/8 c hot water and 1 tbsp of Wild Strawberry tea. Do not strain. Let sit until cool

2. Preheat oven to 350 degrees

3. Combine cake mix, eggs, oil, and brewed tea, including the loose tea pieces

4. The batter should be slightly runny; stir in 1/4 c flour and 1 tsp coco powder. If batter is still runny, add in additional flour as needed. The batter needs to be able to "sit" without running on a cookie sheet

5. Drop a large spoonful of batter onto a cookie sheet, placing each cookie 2 inches apart. This may need to be done in 2-3 separate batches depending on cookie sheet size

6. Bake cookies for 8-12 minutes. The edges should be slightly golden and a toothpick should come out clean

7. Let cookies sit on cookie sheet an additional 3 minutes before removing
