Earthy Grilled Chicken

This smoky/earthy rub adds a summer barbecue flavor to a healthy winter meal.

  • 2 tbsp. pu'erh tea
  • 2 tbsp. kosher salt
  • 2 tbsp. whole cumin seeds
  • 2 tbsp. smoked paprika
  • 2 split chicken breasts, bone-in
  • 2 tsp. olive oil


Combine rub ingredients and grind until fine.

Rub chicken breasts first with olive oil, then with a coating of the spice rub. Bake for 30 min. in a 350°F oven. Then broil 5 min. on each side.

Serve with brown rice and a colorful tossed salad.

Store unused rub in a glass jar.
