Rooibos Spice Chicken
A red bush tea spice rub that can be used on poultry, fish, or red meat. To make rub: 5 min. To make chicken: Prep time: 15 min. Cook time: 35 min.55 m 2
- For the rub:
- 1 tbsp. rooibos�tea leaves
- 1 tsp. crushed sea salt
- 3-4 sprigs of fresh thyme
- paprika to taste
- 1/2 lb. of chicken, preferably boneless breast
- 1 large carrot, diced
- 2 celery stalks, diced
- 1/4 c. of diced chives, sliced
- 1 tbsp. olive oil
- 1/2 c. water
Combine rub ingredients and grind them in a coffee grinder.
Rub the chicken in olive oil and the spice rub as prepared above.
Preheat oven to 350°F.
Place rubbed chicken in a greased glass baking dish. Cook for 15 min.
Add carrot, celery, and chives to the chicken with the 1/2 c. of water.
Cook another 15-20 min. until chicken is done.
