Tea Cookies

just a simple cookie spiked with some good tea. I recommend using Bella Luna for this

  • 6 Medjool Dates
  • 3 tbsp coconut oil ( I use an oil-free butter that i make)
  • 2 tbsp Plant mylk of choice
  • 100 g Flour (gluten-free, all-purpose)
  • 20 g Tapioca flour/starch
  • 1/2 tsp Baking Powder
  • pinch of Salt
  • 1 tbsp Tea (Earl Grey - Bella Luna)


Puree: dates, oil/butter, and plant mylk

Grind tea to a powder

Measure and mix: flour, tapioca, baking powder, tea, and salt

Combine flour and puree

Roll into a log 1 1/2 to 2 inches round and wrap

- or press into molds

Freeze for 20-30 min

Slice into 1/2 inch thick pieces

- or demold

Bake @350F for 15-18 min
