Pi Lo Chun Ice Milk

This recipe is as creamy and smooth as ice cream but with a lighter, more refreshing texture that lets the flavor of the tea really stand out. A great cool treat to enjoy on a hot summer day! Prep time: 10 min. Total time: 2 1/2 hours.

Ingredients

  • 1 1/2 c. water
  • 2/3 c. sugar
  • 2 tbsp. Pi Lo Chun tea leaves
  • 4 tsp. fresh lemon juice
  • 1 1/4 c. milk (2% milkfat)

Directions

Combine water and sugar in a small saucepan; bring to a boil, stirring until sugar dissolves. Add tea; cover and steep 5 min. Strain tea mixture through a fine sieve into a bowl; discard tea leaves. Stir in lemon juice; chill completely.

Stir in milk. Pour mixture into the freezer can of an ice cream freezer; freeze according to manufacturer's instructions. Spoon the ice cream into a freezer-safe container; cover and freeze 2 hours or until firm.
