Genmai Cha Stuffed Mushrooms

Stuffed mushrooms with a green tea twist nutty, wholesome, and delicious! Prep time: 15 min. Cook time: 30 min.

  • 24 small white mushrooms, cleaned and with caps separated from stalks
  • 1 c. hot water
  • 2 tsp. genmai cha leaves
  • 2 tbsp. butter
  • 1/3 c. chopped nuts (almonds or walnuts)
  • 1/2 c. mozzarella cheese
  • 1 c. Italian style bread crumbs
  • fresh parsley to taste


Brew tea in water and let steep for 10 min. Strain.

Melt the butter in a pan over medium-high heat. Chop the mushroom stalks into small pieces and add them to the pan. Saute until they become a bit softer. Add the chopped nuts and bread crumbs to the mix and stir well. Slowly add the brewed tea to the mix so that the mixture has a thick (solid, but not too dry) consistency. Add the mozzarella and parsley and stir well so that the melted cheese blends will all the other ingredients. Remove the mixture from heat. With any remaining tea, baste the caps of the mushrooms and invert on a greased baking sheet. Fill each mushroom with a spoonful of the stuffing. Bake at 350°F for 10-12 min.
