Holiday Oatmeal

Healthy rolled oats cooked in cranberry tea make any day a holiday. Prep time: 8 min. Cook time: about 5 min.

Ingredients

  • 1 tbsp. cranberry tea leaves
  • 1 c. water
  • 1/2 c. rolled oats (not quick-cooking)
  • 1/8 tsp. cinnamon
  • 2 tsp. sugar
  • 2 tbsp. raisins
  • 2 tbsp. chopped walnuts (optional)

Directions

Brew a cup of cranberry tea for 5 min. using 1 c. hot water and 1 tbsp. tea. In separate microwavable bowl, combine oats, cinnamon, sugar, raisins, and walnuts. Make sure you have 1 c. liquid after removing tea (add more if necessary), and stir brewed tea into oatmeal mixture. Cook on high for about 2 min., watching for oatmeal to start rising. When it does, stop microwave and stir. Continue cooking until oatmeal rises a 2nd time. Let sit 2 min. Stir and eat.

    Nice recipe, thank you! I tweaked a few things when I made it (below). The tea gave the oatmeal a nutty brown color and it tasted great.

    Put 4 teaspoons of cinnamon tea in a cup infuser and place in a largish microwave bowl. Add 1/4 cup craisins and 2 cups of boiling water. Cover the bowl and let steep for 5 minutes. Remove the infuser, retaining the tea for a second brew if you like. It should now taste a bit of cranberry from the plumping fruit, but I haven't tried it yet. Add 1 cup of oatmeal, a pinch of salt and 2 teaspoons of sweetener to the microwave bowl. I used Splenda. Microwave on high for three minutes. Stir. Microwave another two minutes. Stir and spoon into two cereal bowls.
