Green Pekoe Pound Cake
A hint of green pekoe tea adds a beautiful accent to the rich pound cake.1 h 5 m 2
- 1 package yellow cake mix
- 1 3.5 oz. package instant vanilla pudding mix
- 3/4 c. vegetable oil
- 3/4 c. water
- 4 eggs
- 3 tbsp. green pekoe tea leaves
- optional: powdered sugar for glaze
Brew 3 tbsp. green tea in 3/4 c. water.
Preheat oven to 350°F. Grease and flour a Bundt pan.
In a large bowl, combine cake mix, pudding mix, oil, and tea. Beat until moistened. Add eggs and beat well. Beat 6-8 min. on medium high speed. Batter will be very thick.
Pour into prepared pan and bake at 350° for 50-60 min. or until toothpick comes out clean.
Top with glaze if desired: mix 2 tbsp. brewed tea and enough powdered sugar to create a glaze (about 6 tbsp.)
