Golden Winter Fruit Compote with Rooibos Tea

This compote is a healthy treat that's perfect for cold weather. Serve alone or with a dollop of cream. It is also wonderful over gingerbread! Prep time: 10 min. Cook time: 30 min.

Ingredients

  • 2 tsp. rooibos tea leaves
  • 1/2 c. diced dried unsweetened mango
  • 1/2 c. diced dried unsweetened pineapple
  • 1/4 c. golden raisins
  • 1 tart apple, such as Fuji or Braeburn, peeled and sliced
  • 1 ripe but firm pear, peeled and sliced
  • 1 cinnamon stick
  • 1/8 tsp. nutmeg

Directions

Combine tea with 1 c. hot water and let brew until deep golden in color, about 5 min. Strain and bring tea to a boil in a medium-sized pan. Add all remaining ingredients and return to a boil. Lower the heat and simmer, covered, for 20-30 min. or until all fruit is soft. Remove cinnamon stick. Allow to cool before eating. Serve warm, at room temperature, or cold.
