Ingredients

  • Donuts:
  • 1 cup water
  • 1.5 tbsp maple creme oolong
  • 1 cup flour
  • 4 eggs
  • 6 tbsp lemon zest
  • some butter
  • some salt
  • oil for deep frying
  • Glaze:
  • 1/4 cup maple syrup
  • 3/4 cup powdered sugar

Directions

Make the tea in the water. I used 212 degree water and steeped for 4 minutes before straining. Then, boil the tea in a saucepan. Add the flour and quickly stir together. Remove from heat and let cool to room temperature. Add eggs 1 at a time, hand mixing. Then add the lemon zest. the batter will be kind of lumpy. Let it rest. Heat up the oil to around 350. A way to test this is to stick a wooden spoon or chopstick in the oil, and see if a steady stream of small bubbles rises around it. Plop some batter into the oil and let it fry, flipping it over once the bubbles around it slow down. Take out and set on a rack.

Making the glaze is simple, just pour the syrup into the sugar and whisk. use either as a dipping glaze or drizzle over the donuts before eating. Super good, if kind of ugly.
