Vanilla Chai Pudding

Creamy chai-flavored pudding that tastes like your favorite fall drink! Made with cashews, chia, maple syrup, and vanilla, it is delicious to enjoy for breakfast, snack, or for a healthy dessert!

Ingredients

  • 1 1/4 cups boiling water
  • 1 1/2 tsp Adagio Rooibos Vanilla Chai tea (more or less, to taste)
  • 1/3 cups raw cashews, soaked overnight (or soak in boiling water for 1 hour), then drained and rinsed
  • 1/4 cup chia seeds
  • 2 Tbsp maple syrup (or to taste)
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon

Directions

1. Steep tea for 5-10 minutes, then strain.

2. Add all ingredients to a high-speed blender and blend until smooth and creamy.

3. Spoon the chia pudding into serving dishes and refrigerate for 1-2 hours.

4. Garnish with nondairy whipped topping and a dash of cinnamon.
