Strawberry Semolina Banana Biscuits & Strawberry Banana Gravy

Ingredients

  • (for biscuits)-
  • 2 1/4 to 2 1/2 cups White Lily all-purpose flour,
  • 1 cup semolina flour,
  • 4 1/2 teaspoons baking powder,
  • 2 Tbsp. granulated sugar
  • 1/2 tsp salt,
  • 3/4 tsp cream of tartar,
  • 3/4 unsalted butter, cold,
  • 1 egg, beaten,
  • 1/2 cup strawberry banana tea water,
  • 1/2 cup buttermilk,
  • 1/2 cup ripe banana, mashed,
  • 1/2 cup strawberries, diced,
  • (for strawberry banana gravy)-
  • 3 tablespoons unsalted butter, room temperature,
  • 2 tablespoons powdered sugar,
  • 1/2 cup strawberry banana tea water,
  • 1 cup heavy cream,

Directions

Preheat oven to 425 degrees F.

Combine dry ingredients in a large bowl. Using a pastry blender, cut in butter till coarse crumbs form. Add egg, tea water and milk, stir just until the dough comes together. Stir in mashed banana and diced strawberries, just till blended, being careful not to overwork dough.

Turn dough onto a lightly floured surface and knead gently. Pat into a 1-inch thickness. Cut into biscuits and place close together on a baking sheet. Bake for 15 to 18 minutes or until tops are golden brown.

Meanwhile, biscuits are baking, prepare strawberry gravy. In a heavy-duty medium skillet, whisk to add 3 tablespoons butter, as butter melts, whisk to add powdered sugar till blended, then slowly add in tea water and cream. Heat over medium-high, cook for 3 to 4 minutes, stirring as needed, until mixture starts to thicken and is smooth and creamy. Serve with biscuits and strawberries to garnish.

Recipe serves six.
