Chamomile Lemon Squares

A new twist on an old favorite!

  • 6 tbsp. butter or margarine
  • 1 c. sugar, divided
  • 1/4 tsp. salt
  • 1 c. all-purpose flour + 2 tbsp.
  • 2 eggs
  • 1/3 c. strongly brewed chamomile Tea
  • 3 tsp. lemon juice
  • 1/4 tsp. baking powder
  • 1 tsp. crushed chamomile tea leaves
  • powdered sugar to garnish


Preheat oven to 350°F. Grease an 8"x8"x2" baking pan. Beat the butter for 30 seconds and beat in 1/4 c. sugar and salt until the mix is fluffy. Stir in 1 c. flour. Press the dough into the bottom of the pan and bake for 15 min. While baking, beat the eggs and add the remaining 3/4 c. sugar, 2 tbsp. flour, baking powder, brewed chamomile tea, and lemon juice. Beat until thickened. When the crust has baked for 15 min., pour the mixture on top of the baked dough and bake for another 25 min. or until the edges of the crust are golden brown. Let cool and sift powdered sugar and/or crushed chamomile tea leaves on top.
