Beef Broth with Jasmine Tea

An elegant broth with just a few pieces of vegetable, meat, and shrimp for interest. Prep time: 15 min. Cook time: 10 min.

  • 2 c. beef broth (canned or homemade)
  • 1/2 c. jasmine tea, brewed and strained
  • 1/2 c. celery, carrot, and water chestnut, sliced paper-thin
  • 1-2 dried Chinese mushrooms that have been soaked, sliced thin
  • 6 small dried shrimp that have been soaked
  • raw beef,3 paper-thin slices
  • sliced scallions to top
  • white pepper


Heat broth and tea; add pepper to taste. Add vegetables and shrimp. Make sure the soup is very hot. Just before serving, add thin slices of beef. Sprinkle with scallion rings. The beef will cook even though it has been removed from the heat source.
