Golden Monkey Jelly
Because Golden Monkey's flavor is so clean, I wanted to showcase it in a simple and refreshing dessert: tea jelly.20 m 2
- 1 c. + 4 tbsp. water
- 1 tbsp. Golden Monkey tea leaves
- 1 tsp. agar-agar flakes (1 1/2 tsp if you like your jelly on the harder side)
- 1 tbsp. mild honey (acacia works great here)
Bring 4 tbsp. water to a boil, add Golden Monkey leaves, and let steep for 5 min. Strain the leaves and reserve the liquid.
Place the agar flakes in a small sauce pan, add 1 c. water, and bring to a boil. Cover and let simmer 5-10 min. or until the flakes have dissolved, stirring occasionally.
When flakes have dissolved, add 1 tbsp. honey and stir well. Add tea, stir again, and divide the mixture between 2 small ramekins. Cool to room temperature and refrigerate until set. Enjoy!
