Spearmint and Citrus Couscous
Spearmint-infused couscous tossed in a citrus dressing and topped with creamy feta cheese makes for a quick and refreshing lunch!10 m 2
- 1 1/2 c. hot water
- 3 tsp. Adagio spearmint tea leaves
- 2 tbsp. lemon juice
- 2 tbsp. orange juice
- 6 tbsp. olive oil
- salt and pepper to taste
- 1/2 c. crumbled feta�cheese
- 1/2 c. chopped red pepper (optional)
- fresh chives (optional)
- 1 c. couscous
Steep 3 tsp. spearmint tea in 1 1/2 c. of water for 4 min. In a glass bowl, pour tea over couscous, cover with plastic wrap, and let sit for 5 min. Fluff with fork.
In a small bowl whisk together juices, oil, and salt and pepper. Pour dressing over couscous.
Top with feta cheese and optional red peppers and chives.
