Jasmine Tea Cookies

Light and crispy jasmine tea cookies—perfect with afternoon tea!

Prep Time: Prep time: 20 min. Chill time: 1 hour Cook time: 8-10 min.
Serving Size: about 3 dozen cookies
  • 1/2 c. butter, softened
  • 1/2 c. sugar
  • 1 egg
  • 1 1/2 c. flour
  • 2 tbsp. strongly steeped jasmine tea
  • 1/2 tsp. crushed jasmine tea leaves
  • 1/2 tsp. baking powder
  • dash salt
  • sugar to sprinkle
Steep 2 tsp. of Jasmine Tea in 1/4 c. of 180°F water for 5 min.
Set in fridge to cool.
Mix sugar and butter in a large bowl until creamy.
Add egg and mix until batter is fluffy.
Blend in flour and 2 tbsp. of the strong jasmine tea brewed earlier.
Crush 1/2 tsp. jasmine tea leaves and sprinkle into batter along with the baking powder and salt. Mix well.
Using wax paper or plastic wrap, roll and form the dough into a 2"x12" log.
Wrap in wax paper and refrigerate until dough is firm, about 1 hour.
Preheat oven to 350°
Slice dough from chilled log in 1/4" slices. Place on nonstick, ungreased cookie sheet, and sprinkle tops with sugar.
Bake 8-10 min. until lightly browned.
