Raspberry Lemonade Scones

Raspberry lemonade is great, scones are great, I mashed them together.

Ingredients

  • 2 cup flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ cup butter
  • 4 tbsp honey
  • 2 tbsp sugar
  • 3 tbsp STRONG raspberry patch tea (like, 1 tsp tea to 1/4 cup water strong)
  • 2 tbsp lemon zest
  • ½ cup milk
  • 2 tsp vanilla

Directions

Mix flour, baking powder, salt, and sugar. Cut in butter until evenly distributed. I use a fork for this. Add honey, tea, zest, milk, and vanilla. Turn out onto a floured surface and knead a few times. Roll into a round disk about 1 inch thick and cut into 8 pieces. Sprinkle with more sugar if desired and bake at 400 for 15-20 minutes.

    I honestly had to add about an extra cup of flour to get the consistency that I am accustomed to when making scones. This may have affected the taste because there were only faint hints of lemon, and almost no taste of raspberry. It did, however, come out very flaky, where it felt like a large cookie. The sugar I added on top helped with the sweetness. The picture attached is before putting in the oven.
