Pomegranate Green Jam

Pomegranate jam gives a powerful flavor to toast, thumbprint cookies, or any other tasties you can think of. If you want a change from the usual, go for some seedy, rich jam you can't find in stores. Makes about 3.5 cups

  • 3 cup pomegranate seeds (pre prepared, as breaking open a pom takes a while)
  • ⅔ cup brewed green tea (I used sleeping dragon)
  • 3 tbsp lemon juice
  • 1 tbsp powdered pectin
  • ½ cup sugar
  • ⅓ cup honey (local if possible, wildflower if not)


Finely chop pomegranate. In a saucepan, combine pom pulp, tea, juice, and pectin. Heat on high until it can’t be stirred down. Stir in sugar and honey. Stir constantly at a boil for 1 minute. Remove from heat, transfer to jars, and cool. Store in the fridge.
