Tea Mop Sauce
This is a spicy mop sauce that can be the jumping off point to adding other ingredients like sesame seeds, sun-dried tomatoes, cilantro, chives, lovage, more peppers. Your tastes, main ingredient, and the remainder of your menu could dictate your direction. Great with grilled poultry or shrimp.8 m 2
- 1 tbsp. Wuyi oolong tea leaves
- 1 c. boiling water
- 1/3 c. tom yum paste (Thai)
- 1 tbsp. hoisin sauce
Brew tea in boiling water for 5 min. Drain and add tom yum paste and hoisin sauce.
Use to baste turkey drumsticks or shrimp before grilling.
