Roasted Red Rocks Potatoes
The rich earthy flavor of red potatoes lend itself beautifully to the creamy sweet flavor of Red Rocks tea, a rooibos-based tea blended with vanilla and almonds. - 2 lb. red potatoes, cubed
- 1/2 c. olive oil
- 1/2 c. balsamic vinegar
- 3 tsp. agave (or honey)
- 3 tbsp. Red Rocks tea, finely ground
- 1 tbsp. Dijon mustard
- 1 tsp. salt
- 1 tsp. white pepper
Preheat oven to 425°F.
In a large roasting pan or baking sheet, spread cubed potatoes evenly.
In a bowl, mix oil, vinegar, Red Rocks tea, agave, salt, and pepper.
Drizzle mixture over potatoes and toss together.
Cover with foil and place in oven.
Bake for 45-50 min. Uncover and stir.
Broil for an additional 5-10 min. to brown top.
