Roasted Red Rocks Potatoes

The rich earthy flavor of red potatoes lend itself beautifully to the creamy sweet flavor of Red Rocks tea, a rooibos-based tea blended with vanilla and almonds. The result is a creamy, sweet earthy side dish that complements chicken, pork, steak, eggs, or salmon. Prep time: 15-20 min. Cook time: 50-60 min.

  • 2 lb. red potatoes, cubed
  • 1/2 c. olive oil
  • 1/2 c. balsamic vinegar
  • 3 tsp. agave (or honey)
  • 3 tbsp. Red Rocks tea, finely ground
  • 1 tbsp. Dijon mustard
  • 1 tsp. salt
  • 1 tsp. white pepper


Preheat oven to 425°F.

In a large roasting pan or baking sheet, spread cubed potatoes evenly.

In a bowl, mix oil, vinegar, Red Rocks tea, agave, salt, and pepper.

Drizzle mixture over potatoes and toss together.

Cover with foil and place in oven.

Bake for 45-50 min. Uncover and stir.

Broil for an additional 5-10 min. to brown top.
