Minty Salsa

This sweet, fragrant salsa is a great complement to broiled fish or baked chicken, in addition to being yummy served with chips and assorted raw vegetables. Prep time: 15 min. Chill time: 30 min.

  • 1-2 cloves garlic, minced
  • 1/2 c. red onion, finely diced
  • 1 1/2 c. cubed pineapple (canned works well, drained well)
  • 2 tbsp. dried spearmint tea leaves
  • 2 tbsp. fresh mint, chopped finely
  • 2 spring onions, snipped into small pieces
  • 2 tbsp. olive oil
  • juice of 1 large or 2 small limes
  • salt and pepper to taste


In a bowl, mix together the garlic, onion, pineapple, spearmint tea leaves, fresh mint, spring onions, olive oil, and lime juice. Season to taste. Refrigerate 30 min. or longer. Serve over broiled fish or chicken, or with chips and raw vegetables.
