Lapsang Veggie Soulburger

This healthy vegetarian burger gives a smoky, blues-style kick that will make an impression! Prep time: 10 min. Cook time: 20 min.

  • 2 c. black-eyed peas, cooked and drained
  • 1 c. fresh mushrooms, chopped
  • 1/2 c. cubed, cooked cauliflower florets
  • 3 egg whites
  • 2 tsp. lapsang souchong tea
  • 1 tsp. minced garlic
  • 1 tsp. horseradish
  • 1 tsp. Worcestershire sauce
  • 1/4 tsp. red pepper flakes


Preheat oven to 400*F. Mix all ingredients together in a large bowl, mashing the peas lightly against the side of the bowl. After thoroughly mixing ingredients, pat into 3-4" patties. Place burgers on a baking sheet lightly coated with cooking spray. Lightly spray the top of each burger for easy flipping. Bake for 10 min. or until the burgers are firm on one side, then flip and bake another 10 min. Remove immediately. The burgers may be served with blue cheese coleslaw for a great taste sensation.
