Smoky Deviled Eggs

Deviled eggs with a subtle smoky flavor.

Prep Time: Soak time: 36 hours Prep/cook time: 20 min.
Serving Size: makes 12 deviled eggs
Ingredients
  • 6 eggs, hard boiled
  • 1/2 c. mayo
  • 1-2 tbsp. dill pickle relish
  • 1/2-1 tsp. ground red pepper (to taste)
  • salt to taste
  • 4 c. strong brewed lapsang souchong tea
Directions
Peel boiled eggs. Pour strong tea over eggs until covered. Place in refrigerator and marinate for 24-36 hours. To increase the amount of flavor absorbed into the eggs, you may want to prick eggs with a fork or toothpick, but not into the yolk. Egg whites will take on a brown color and subtle smoky flavor. Remove eggs from tea. Cut in half and remove yolk. Mix thoroughly with mayo, relish, and seasonings. Carefully place about 1 heaping tsp. of yolk mixture into each egg half. For garnish, sprinkle with a little red pepper if desired.
