Smokey Deviled Eggs

Deviled eggs with a suble smokey flavor.

Serving Size: 4 to 5
  • 6 eggs, boiled.
  • 1/2 cup mayo
  • 1 - 2 Tablespoons dill pickle relish
  • 1/2 - 1 Teaspoon ground red pepper. (to taste)
  • Salt to taste.
  • 4 cups Strong brewed Lapsong Souchong tea.
Peel boiled eggs. Pour strong tea over eggs until covered. Place in refrigerator and marinate for 24 - 36 hours. To increase the amount of flavor absorbed into the eggs, you may want to prick eggs with a fork or toothpick, but not into the yolk. Egg whites will take on a brown color and subtle smokey flavor. Remove eggs from tea. Cut in half and remove yolk. Mix thoroughly with mayo, relish, and seasonings. Carefully place about 1 heaping teaspoon of yolk mixture into each egg half. For garnish you could sprinkle with a little red pepper.
