Delicate Spring Soup

A light chicken and tofu soup flavored with Pi Lo Chun tea; perfect for a summer lunch.

Prep Time: Prep time: 10 min. Cook time: 10 min.
Serving Size: serves 2-3
Ingredients
  • 1 boneless, skinless chicken breast, cut into cubes
  • 3 scallions, sliced
  • 1 garlic clove, smashed
  • 2 c. vegetable or chicken broth
  • 2 tsp. Pi Lo Chun tea leaves
  • 2 c. hot water
  • 1/2 package firm tofu, diced
  • 1 tbsp. oil
  • optional thin lemon slices for garnish
Directions
Brew 2 tsp. tea in 2 c. hot water and steep for 10 min.
Sauté garlic, onion, and chicken in oil until chicken is done. Add brewed tea, broth, and tofu. Heat until eating temperature.
Garnish with lemon slices if desired.
