Li Zi Jello cake

  • 4 eggs
  • 1 cup brewed Li Zi Nutcracker tea (passed through a coffee filter )(divide in 2 half cups )
  • 3 tbsp vegetable oil
  • 3 tbsp sifted baking powder
  • 3 cups sifted cake flour
  • 1 cup sugar plus 1 tablespoon
  • 1/2 cup orange juice
  • unflavored knox gelatin
stir unflavored knox gelatin in a small sauce pan w/ the tablespoon of sugar and simmer till the gelatin is dissolved... add the 1/cup of orange juice and set aside .

mix all other ingredients in a mixing bowl and bake cake at 375 degree oven in a round or fluted greased and floured cake pan for 35 to 40 minutes... till a toothpick inserted in the middle comes out clean.

when the cake is cooled... poke holes all over top and sides then take the cooled knox gelatin mix and pour it over the holes... place in the fridge over night.
