Spicy Cranberry Bread

A festive spiced cranberry nut bread

Prep Time: 1 hour 15 min.
Serving Size: makes 2 loaves (36 servings)
  • 4 eggs
  • 1 can jellied or whole cranberry sauce
  • 1 2/3 c. hot water
  • 1 tbsp. cranberry tea leaves
  • 1 c. vegetable oil
  • 1 3/4 c. flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. clove
  • 3 c. sugar
  • 1 c. finely chopped pecans or walnuts, optional
Brew tea in water and let steep 5 min. Strain.
In a large bowl, beat eggs well. Add cranberry sauce, brewed tea, and oil and beat again.
Sift all the dry ingredients together, then add to wet ingredients.
Pour batter into 2 greased and floured loaf pans. Bake at 350°F for about 1 hour
