Rooibos Couscous with Shiitake and Edamame

Africa meets Asia in this super easy, lightning-quick, healthy, delicious recipe.

Prep Time: 10 min.
Serving Size: serves 2-4
  • 1 1/2 c. water
  • 3 tsp. rooibos tea leaves
  • 1 c. couscous
  • 1/4 lb. chopped shiitake mushrooms
  • 1 c. shelled edamame, thawed
  • 2 tbsp. sesame oil
  • 1 tsp. soy sauce
  • salt to taste
Make tea with the water and rooibos. Pour the brewed tea into a small saucepan. Bring to a boil. Remove from heat, stir in couscous, and cover.
Heat oil in a large sauté pan over low-medium heat. Cook the mushrooms for a few min. Add the edamame and soy sauce. Cook for another 1-2 min.
Fluff the couscous with a fork, mix everything together, season with salt, and you've got a meal.
