Earthy Grilled Chicken

This smoky/earthy rub adds a summer bbq flavor to a healthy winter meal.

Prep Time: 15 minutes prep, 35 minutes cooking time
Serving Size: 2
  • Pu Erh tea, two tablespoons
  • Kosher Salt, two tablespoons
  • Whole cumin seeds, two tablespoons
  • Smoked paprika, two tablespoons
  • Grind together until fine and unused portion store in a glass jar.
  • Olive oil
  • Small Split Chicken breasts, bone in.
Combine rub ingredients and grind until fine.
Rub chicken breasts with olive oil and then rub with a coating of the rub. Bake for 30 minutes in a 350 degree oven. Switch the oven to broil (overhead heat) Grill for five minutes on each side.

Serve with brown rice and a colorful tossed salad.
